Prof. Dr. Uğur Coşkun added that with the study published in the journal Cancer Epidemiology, Biomarkers, Prevention, the problem of why red meat and processed foods do not cause bowel cancer in everyone has been clarified and said, "In this study published by Stern and colleagues in the United States (USA), 29,482 cases of bowel cancer and 39,635 non-cancer control cases were included. In this study, the risk of bowel cancer was found to be 30 percent in those who consumed large amounts of red meat and more than 40 percent in those who consumed large amounts of processed foods such as salami and sausage. In the detailed genomic analysis conducted in this study, the genes HAS2 and SMAD7 were found to be responsible for the relationship between excessive consumption of red meat and processed foods and bowel cancer. In addition to the risk mentioned above, the risk of bowel cancer was found to be 38 percent higher in individuals with the HAS2 gene and 18 percent higher in those with SMAD7. In conclusion, this study may explain why some people who consume a lot of red meat or processed foods develop bowel cancer while others do not. When this study is developed and the findings are confirmed by new studies, perhaps in the near future, it will be possible to reveal in whom red meat and processed foods pose a risk of bowel cancer and who can consume these foods more safely."
